Perfect Cranberry Relish



I have been making this cranberry recipe as long as I've been married to my cute husband. I actually cut the recipe out of the Los Angeles Times newspaper the first year we were married, before we moved to Chicago.  It's been a while.  I have tried a couple different recipes over the years, but always go back to this one.  It's easily my favorite.  There is a recipe on the back of the cranberry bag.  Try this, it's so much better and still extremely simple.  You'll make it once and never go near the canned version again.  Happy Holidays! 

1 1/2 cups sugar
3/4 cups water
3 whole cloves
3 whole allspice 
3 (3~inch) cinnamon sticks
1 12ounce bag fresh cranberries
grated zest from 1 orange

Bring the sugar, water, cloves, allspice and cinnamon sticks to a boil in a medium sized saucepan.  Cook, stirring until syrup is clear about 3~4 minutes.  Add the cranberries and cook no longer than 5 minutes.  Cranberries will begin to pop.  Don't overcook, the cranberries will be mushy. 

Remove from heat, add the grated orange zest.  Cool.  Refrigerate.  Can be made a few days before you  serve them.  The flavors will blend together more if you make ahead.  

Before serving, take out the clove, allspice and cinnamon. 

Makes about 2 1/2 cups.

Toffee Apple French Toast with Apple Syrup



They say an apple a day...

Fall is here, and where have I been?  I have a bunch of apple recipes I need to post.  I guess I need to get busy.  I am realizing I love cooking with apples.

It's not the sexiest fruit, but here in Chicago in the Fall the stores are packed with them.  I was recently at the grocery store with a friend and she was bummed there wasn't anything decent for a fruit tray.  Luckily she was only bringing the fruit tray to my house for a brunch.  No biggie.  I guess it's not the best time to offer to bring fruit.  :)  I need to remember that one when I offer to bring something somewhere.

I love having people over for breakfast/brunch.  It's such a comfy, casual thing.  Who doesn't love brunch?  You can't really go wrong.  Wanting to have people over?  Invite them to come in their pj's.  It's fun!

This is an overnight recipe which is so helpful when you are getting up in the am and don't have a ton of time before people will be arriving.  The syrup is fantastic, it totally steals the show.

This recipe comes from Nadine Mesch winner of a baking contest from Costco.  Yup, I'll find recipes anywhere.  

French Toast~
8 cups French bread, cut into 1 inch cubes
3 tart apples, peeled and chopped
8 ounces cream cheese, softened
3/4 cups brown sugar
1/4 cup sugar
1/4 cup apple juice
2 teaspoons vanilla extract, divided
1/2 cup English toffee bits
5 eggs
3/4 cup milk

Apple Syrup~
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups apple juice
2 tablespoons lemon juice
5 tablespoons butter

For the French Toast~
Place half of the bread cubes in a greased 13x9 inch baking pan.  Top with apples.  In a large bowl, beat the cream cheese, sugars, apple juice and 1 teaspoon vanilla until smooth.  Stir in toffee bits.  Spread cream cheese mixture over apples.  Top with remaining bread cubes.

In another bowl, beat the eggs, milk and 1 teaspoon vanilla until well blended; pour over the bread.  Cover with foil and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking.  Bake, uncovered at 350 degrees for about 45 minutes or until a knife inserted in the center comes out clean.  While the French toast is baking, prepare the apple syrup.

For the Apple Syrup~
In a medium size saucepan, whisk together the sugar, cornstarch, cinnamon, nutmeg, apple juice and lemon juice; heat to a boil, whisking constantly.  Boil for 1 minute, then stir in butter.  Serve over warm french toast.

Banana Chocolate Chip Cookies



Got Bananas?!  Here is a quick and easy recipe everyone will love.  

I've been making this cookie recipe for years.  My friend Jen gave it to me about twenty years ago.  I haven't made any changes to it.  Why change something that doesn't need it?  

I love banana, and this cookie is a nice change from the normal chocolate chip.  When I have leftover bananas I try to find something to add them to.  This is a great, soft cookie.  A fun change from banana bread I usually make.  The kids seem to devour these.

2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup butter at room temperature
1 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 teaspoon vanilla extract
1/2 cup mashed banana, about 1 banana
2 cups semisweet chocolate chips

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.  In a medium bowl, whisk together the flour, salt and baking soda.  Set aside.

In a large bowl, cream the butter and the sugars until they are light and fluffy.  Beat in eggs one at a time.  Mix in the vanilla extract and mashed banana.  

Add the flour mixture to the banana mixture.  Mix until combined.  Add the chocolate chips and mix until the chocolate is well distributed in the batter.  

Drop 1 1/2 ~ 2 tablespoons of batter on the cookie sheets, leaving a couple inches in between to allow cookies to spread. 

Bake for 11~13 minutes or until the cookies are light golden brown.  Be careful not to overcook as cookies will tend to be dry.  Allow to cool on the cookie sheet a couple minutes before you transfer them to a wire rack.  

Makes about 3 dozen cookies.

Strawberry Marmalade



I'll admit that I'm not much of a canner.  I wish I had paid better attention to my Mom and Grandmother when they used to can.  I have to say, I'm kinda getting into it.  I have made a handful of things by myself.  Yes, that was a huge undertaking the first few times!

I saw a magazine the other day that had a few recipes that sounded good to me.  This was one of them.  I'm the only person in my house who likes orange marmalade.  The kids think it's gross, because it's not very sweet.  So, when I saw this I thought the strawberries would probably sweeten it up enough for even my kids to enjoy.  Yep, they loved it.

I'm such a dork...here is just one of many reasons why.
The first night we tried the marmalade, I served garlic butter rolls!  Seriously, there are a couple things wrong with this.  I didn't notice some store bought dough said "garlic butter" which, I wouldn't have bought.  I'm not into the fake butter taste.  Secondly, I didn't notice when I baked them.  My family was telling me it was great!  How sweet are they?  It wasn't until after dinner when I was bugged because I thought the marmalade was crap.  I checked the rolls package.  Garlic Butter, really?

The good news is, the marmalade isn't gross.  Just have normal bread.  ;)

Recipe comes from Taste of Home Canning & Preserving 2012.

2 medium oranges
2 medium lemons
1/2 cup water
1/8 teaspoon baking soda
1 quart ripe strawberries, crushed
7 cups sugar
1 pouch liquid fruit pectin, 3 ounces

Peel outer layer of oranges and lemons; set aside.  Remove the white membrane from fruit and discard. Set the fruit aside.  Chop peels; place in a large saucepan.  Add water and baking soda; cover and bring to a boil.  Simmer for 10 minutes.

Meanwhile, section oranges and lemons, reserving juice.  Add fruit and juice to the saucepan with the peels.  Cover and simmer for 20 minutes.  Add strawberries.  Measure fruit; return 4 cups to the saucepan.  (If you have more than 4 cups, discard any extra; if less, add water to equal 4 cups).  Add sugar and mix well.  Boil, uncovered, for 5 minutes.

Remove from heat; stir in pectin.  Stir for 5 minutes to cool; skim off foam.

Carefully ladle into hot half~pint jars or freezer containers, leaving 1/4 inch headspace.  Remove air bubbles; wipe rims and adjust lids.  Process for 10 minutes in a boiling~water canner or store in freezer.

Yield: about 10 half pints

Serve with anything that doesn't have garlic butter in it ;)

Fresh Strawberry Cake


My spunky Madison wanted a strawberry cake for her 4th birthday.  If any of you have the pleasure to know her, you know that what Madison wants Madison gets.  I so love that about her.  Definitely a diva~in~training!  She informed me she wanted a cake just like strawberry shortcake, whatever that means.  This is what she got :)  It's a very sweet cake, of course, she loved it.

The fresh strawberry in the cake and frosting makes this more than just a doctored cake mix.  If you've got a girly girl, give this one a try.  If you want to frost the whole cake there is enough frosting to do so.  If you don't have three cake pans, just make a two layer cake.

Recipe slightly adapted from The Cake Mix Doctor Cookbook.

Cake~ 
1 plain white cake mix
1 3 ounce package strawberry jello 
4 Tablespoons flour
1 cup vegetable oil
1/2 cup granulated sugar
1/2 cup half and half
4 large eggs
1/2 cup fresh strawberries, finely chopped and (the juice from cutting)

Frosting~
1/2 cup salted butter, at room temperature
4 cups powdered sugar, sifted 
1/2 cup fresh strawberries, finely chopped and (the juice from cutting)

Preheat oven to 350 degrees.  Lightly butter and dust with flour three 9~inch round cake pans.  Set aside.  

Combine the cake mix, jello, flour, oil, sugar, half and half, eggs, strawberries, and strawberry juice in a large mixing bowl and blend with an electric mixer on low speed for 1 minute.  Scrape the sides of the bowl, and beat for 2 minutes on medium speed.  The strawberries should be incorporated well into the batter.  Divide the batter among the three baking pans. 

Bake the cakes for about 33~35 minutes or until they spring back when lightly pressed and just start to pull away from the sides of the pan.  Place the pans on wire racks to cool for 10 minutes.  Invert each cake onto a rack, then invert again onto another rack so the cakes are right side up.  Allow to cool completely, about 30 minutes.  

Meanwhile, prepare the frosting.  Place the softened butter in a large mixing bowl and blend with an electric mixer on low speed until fluffy, about 20 seconds.  Add the powdered sugar and strawberries.  Blend on low speed until the frosting is creamy and a spreadable consistency.  If it's too thin, add more sugar.  If it's too thick add more strawberries.  

Assemble the cake.  Place one cake layer, right side up, on a serving platter.  Spread the top with frosting.  Add another layer of cake and frosting.  Repeat with third layer of cake and frosting.  The cake should resemble a torte with the sides left unfrosted.  If you want to frost the whole cake, go for it.  Decorate the top with fresh strawberries.  Serve at once or chill the cake until you are ready to serve.  

Store leftovers in the refrigerator.  

* If you use sliced strawberries on the top of the cake for garnish, put them on right before serving.  Strawberry juice will start to come out of them.  Not a big deal, just be aware.  :)

Chicken with Tarragon~Raspberry Cream Sauce


I love fresh herbs!  Honestly, I can't seem to help myself when I'm at the store.
It's like buying shoes or something.  I need to plant a garden because I spend a small fortune with the amount I buy at the store.  My favorites are thyme, sage, basil, rosemary, but the top of the list for me is tarragon.  I find any excuse to use it.  One of my favorites is tarragon~shallot butter that I top my steak with.  I'll have to post that one soon, especially with grill season upon us!  So, when I saw this recipe in Better Homes and Gardens special Chicken edition, I had to give it a try.

I am also beginning to appreciate quick, easy sautes.  I can't always spend hours in the kitchen, as much as I'd love to.   So sad.  I recently taught a 20 minute cooking class and thought, what?  This is so not my thing.  But, hey I'm a work in progress.  This is a great dish for weeknight cooking.

1 tablespoon olive oil
1 tablespoon butter
4 boneless, skinless chicken breast halves
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup green onions only the white portion, sliced
1/2 cup chicken broth
1/2 cup heavy whipping cream
1/3 cup dry white wine
2 tablespoons fresh tarragon, snipped
12 ounces baby carrots, peeled and tops trimmed
1 small bunch watercress, thick stems removed
1 cup fresh raspberries

In a large saute pan, heat olive oil over medium~high heat; add butter.  When butter melts, add chicken that has been seasoned with salt and pepper on both sides to the pan.  Cook for 10~12 minutes or until chicken is no longer pink (170*F ), turning once.  Transfer chicken to a serving platter; keep warm.

Add onions to the saute pan.  Saute for about 3 minutes, or until just tender; transfer to platter with chicken.

Add broth, cream, and wine to pan.  Bring to a boil and reduce heat to medium~low.  Simmer uncovered for about 8 minutes or until slightly thickened.  Stir in tarragon.  Return the chicken, onion, and accumulated juices on platter to pan.  Reduce heat to low, cover and keep warm.

Meanwhile, in a medium saucepan, cook carrots in lightly salted boiling water about 10 minutes or until crisp tender.  Drain and return to saucepan.

To serve, toss watercress with carrots to warm slightly.  Lay out carrots and watercress onto serving platter.  Top with chicken.  Gently stir raspberries into remaining sauce in saute pan; spoon over chicken.

Apple Coffee Cake


This recipe comes from the Vichy Hot Springs Resort & Inn in Ukiah, California.  The cookbook is, Breakfast In Bed California by Carol Frieberg.  The recipes are from the best Bed & Breakfast sites in California.  I received this book as a wedding gift and have been making yummy things for breakfast and brunch ever since.

Breakfast and/or Brunch is one of my favorite things.  I also love having people over for brunch.  It's seems fun, relaxed, and just a little different from the normal dinner party.  I haven't met anyone who doesn't like breakfast food.  It doesn't matter if you like savory or sweet, there is something for everyone.  This is a great sweet addition to any breakfast menu.  The grated apple makes this a fun change from the same old coffee cake.  It's perfect for this time of the year with apples so abundant.  This is Vichy Hot Springs recipe as is.  I usually add a little extra cinnamon, as I do with most of my recipes.  The recipe also calls for cooking apples.  I use Granny Smith.

1/4 cup butter, softened
1 cup granulated sugar
3 eggs
1 teaspoon vanilla extract
2 1/2 cups all~purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
5 cooking apples, peeled, cored, and grated
Cinnamon sugar (2 tablespoons granulated sugar mixed with 1/2 teaspoon ground cinnamon)

Topping~
2 tablespoons cold butter
1/2 cup granulated sugar
1/2 cup all~purpose flour

Glaze~
1 1/4 cups powdered sugar
2 tablespoons milk

Preheat oven to 350 degrees.  In large bowl, cream butter and sugar; add egg and vanilla.  In separate bowl, combine flour, baking powder, and salt.  Add flour mixture alternately with milk to butter mixture.  Spread batter in greased 15 x 10 inch baking pan.  Sprinkle grated apples over batter. Sprinkle lightly with cinnamon sugar mixture.  In medium bowl, cut butter into sugar and flour until mixture resembles fine crumbs; sprinkle over apples.  Bake 40 minutes or until cake tests done.  In small bowl, blend powdered sugar with milk; glaze cake while still warm.

Cantaloupe Lime Smoothie

I seem to be on a smoothie kick.  Summer rolls around and I want something light, cold and refreshing.  Who can blame me, right?

I recently posted a honeydew melon lemonade smoothie that is really good.  I wanted to give cantaloupe it's turn.  This is a light, cold and refreshing smoothie.  Perfect!  The orange and green are pretty together.  I love the lime zest, for taste and color.  This would be a great smoothie to serve at a brunch.
Recipe adapted from Good Housekeeping.

2 cups diced cantaloupe
1/2 teaspoon lime zest
2 tablespoons lime juice
1/3 cup frozen peaches
2 tablespoons honey
2 cups ice cubes

In a blender, combine cantaloupe, lime zest, lime juice, peaches, honey and ice.  Blend until smooth.  Enjoy!

Banana Pancakes with Orange Butter


Sometimes I get stuck in a rut.  I'm not always in the mood for maple syrup, no matter how good it is.  These are a great pancake to make when you want something different.  The pancake batter is a simple recipe, but the added banana and orange butter makes these special.

You don't need to go out to your favorite pancake house when you can make these at home.

1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons cooking oil
3~4 bananas (only mash 2 and save the others for garnish)
1/2 cup butter
2 tablespoons frozen orange juice concentrate
1/2 cup light brown sugar

In a large mixing bowl, combine the flour, sugar, baking powder and salt.  In a medium mixing bowl combine the egg, milk, and cooking oil.  Add to the flour mixture.  Stir until just blended, batter should still be lumpy.  Fold in the mashed bananas, be careful not to over mix.

Heat a heavy skillet or griddle and pour about 1/4 cup of pancake mix onto hot griddle.  Cook until pancakes are golden brown, turning to cook the second side when pancake has a bubbly surface and is slightly dry around the edge.

In a small saucepan, combine the butter, orange juice concentrate and brown sugar.  Heat until butter is melted and sugar is dissolved.  Keep sauce warm.

Serve pancakes with orange butter and banana slices.

Cherry Lemonade


This lemonade packs a punch, no doubt about it.  So if you're like my cute husband you may want to water it down a bit.  My kids love making this one.  They ask for it all the time.  If you feel like puckering up and have no one to kiss... this one is for you.

1 16 ounce bag frozen cherries
1 16 ounce jar maraschino cherries without stems
1 1/4 cups sugar
1 cup fresh lemon juice, about 5 or 6 lemons
4~6 cups cold water

Process cherries, cherry juice from jar, sugar and lemon juice in a blender until smooth.  Pour fruit mixture through a wire mesh strainer into a pitcher, discarding solids.  (I actually strain it twice).  Stir in water to taste.  Serve over ice.

*If it's too thick or strong for your liking... add more water.

Buttermilk and Lemon Scented Pancakes with Warm Blueberry Syrup

My son Cameron wanted me to make this for his birthday breakfast.  He is 12 and completely, without a doubt, my son.  He will sit and watch cooking shows with me into the wee hours of the night, or in the middle of a Saturday.   He has his own list of favorites he likes to Tivo.  Like me, he loves the presentation of his food, (he likes to call it "professional").  It always needs to look professional. ;)  Now, my husband has someone else in the house to roll his eyes at when we want to stick some garnish on a plate.  

I love these pancakes, they are pretty simple and easy to make.  The syrup is even easier, with only two ingredients.  I usually leave the blueberries whole the day I make them.  Whatever is left over I will puree and put through a strainer and keep in the refrigerator.  The flavor is actually better pureed.  

2 cups fresh blueberries
2 cups light corn syrup
1 cup all~purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 cup buttermilk
1 large egg
2 tablespoons butter, melted
2 tablespoons lemon zest
confectioners' sugar

In a saucepan, over medium heat, combine the blueberries and corn syrup.  Bring to a boil and cook for a couple of minutes.  Remove from heat and with a potato masher, mash the berries.  Keep warm.  

In a small mixing bowl, sift together the flour, sugar, baking powder, baking soda and salt.  

In a medium mixing bowl, whisk the buttermilk, egg, and butter until fully incorporated.  Add the sifted ingredients to the milk mixture and whisk until it is slightly smooth, but still has some lumps.  Fold in the lemon zest and allow the batter to rest for a couple minutes. 

Lightly grease a griddle over medium heat.  Cooking in batches, pour 1/4 cup of the batter onto the hot griddle for each pancake.  Cook for about 2~3 minutes or until the batter bubbles and is golden brown, flip and continue to cook until golden brown.  Remove and stack on serving plates.  Place a pat of butter between each pancake.  Drizzle the pancakes with the syrup and garnish with the confectioners' sugar.  




With the remaining syrup, I puree it and put it through a strainer.  My kids like it better this way.

Mixed Fruit Smoothie


We are such a smoothie house.  My kid's friends come over and ask me what kind of smoothie I'm going to make.  Sometimes we use a recipe, but most of the time we just make them up!

My husband bought me a Vita~Mix blender a few years ago.  This was the first recipe we tried from cookbook that came with it.  The kids love it and it's really easy.  I usually have all the ingredients on hand, so we make it pretty often.  I have no problem making this for them whenever they want.  Cameron actually makes it most of the time.  The girls love it because it's pink!

1 cup frozen strawberries
2 bananas
1 orange
1/2 cup frozen peaches
1 cup vanilla or plain yogurt
1/2 cup ice cubes

Place all ingredients in blender and blend until smooth, about 1 minute.  Serve immediately.

*You can add a little honey or sugar if you would like it a little sweeter.  I used to...now I just leave it out.

Spiced Pork and Apples



An Asian twist on a classic. Pork chops and apples enhanced with sesame oil and five~spice powder. This is really flavorful, no need for added spices or salt. In fact, I would use the less sodium soy sauce in this recipe, if you don't already use it. The pork needs to marinate for 4~12 hours. Get it going in the morning and when you are done with a busy day, it won't stress you out. It's a really quick and easy dinner to pull off. Serve it with some coconut rice or even some plain rice and you are good to go.

4~6 thin cut (about 1/2 inch thick) boneless pork chops
1/4 cup vegetable oil
1/4 cup packed brown sugar
1/4 cup soy sauce
2 tablespoons dry sherry
2 teaspoons toasted sesame oil
1 teaspoon five~spice powder
1 2 inch piece fresh ginger, peeled and thinly sliced
2 large baking apples, cored and cut into thick slices
1/4 teaspoon ground cinnamon
5 green onions, diagonally sliced into 1 inch pieces
2 tablespoons honey

Place pork chops in a resealable plastic bag set in a shallow dish; set aside. For marinade, in a small bowl combine oil, brown sugar, soy sauce, sherry, sesame oil, five~spice powder, and ginger. Pour marinade over pork chops. Seal bag; turn to coat chops. Marinate in the refrigerator for 4~12 hours, turning occasionally.

Preheat oven to 425 degrees. Drain chops, reserving 1/3 cup marinade. Arrange chops in an ungreased 3 quart baking dish. Arrange apples around chops. Drizzle apples with the reserved marinade. Sprinkle apples with cinnamon.

Bake, uncovered, for 10 minutes. Add green onions. Bake, uncovered, for another 10~15 minutes or until chops are cooked through (160 degrees) and apples are tender. Arrange chops and apples on a serving platter. Drizzle with honey.

Tropical "Green" Smoothie



I make some kind of smoothie just about every day for my kids. Sometimes, I try to sneak something healthy in them. If it will get my skinny kids to consume more veggies, I'm going for it. I'm not getting to radical on you and going all "healthy green revolution." I'm just trying to feel good about what my kids are eating or not eating.

Hmm...Spinach Smoothie!?

I have to admit, it took me a while to try this one. I'm glad I did, my kids have been asking me to make the weird spinach one. They loved it! So, skip the salad and try a smoothie, it's pretty good.


2 cups spinach
1 mango
2 bananas
1 cup pineapple chunks (fresh)
1 cup water
1 cup ice

Blend ingredients until smooth.

Apricot~Ginger Chicken



Ok, I love to cook. But, when I'm tired (with a kid in middle school, a 3rd grade 'diva in training' and a 2 year old) how could I possibly be tired, you ask? Even the best of us often need a night off from cooking. This recipe is really fast and easy. It's great for when you don't have a lot of time or energy! My kids love it because the sauce is sweet. Try it, I'm sure you'll add it to your "Really...It's dinner time" dishes ;) Before you order that pizza, give it a shot.

2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon sherry
1/2 cup Apricot preserves
1 tablespoon oil
1 clove garlic, minced
1 teaspoon fresh ginger, grated
1 pound Chicken breasts, boneless skinless~ cut into strips or bite sized pieces
1 medium green pepper, chopped
3~4 green onions, thinly sliced
3/4 cup salted cashews, reserve some for garnish
a handful of cilantro for garnish

In a bowl, combine the soy sauce, cornstarch and sherry(you could substitute chicken stock here). Mix until smooth. Stir in the apricot preserves, oil, garlic and ginger. Set aside.

In a saute pan or wok. Heat a very little amount of oil and saute the chicken for a few minutes until almost cooked through. Add the sauce, green pepper, onion, and cashews to the pan. Continue cooking until the chicken is no longer pink.

Serve with rice. Garnish with reserved cashews and cilantro.

Strawberry Shortcake



I love strawberries! When I was a kid, we had a ton of strawberries in the garden. They were next to the mint. I think I hung out in the backyard a lot eating strawberries wrapped in mint. Not bad if I do say so myself :) I make this pretty much every 4th of July. Adding blueberries, it's the perfect red, white and blue dessert! I grew up with the biscuit style and never really fell in love with angel food cake. Maybe I haven't really had a good one. Although, I think my good friend Kori might have a good recipe she's going to try. Maybe she will share some with me ;)

This recipe isn't gourmet. It comes right off the Bisquick box, with a couple small changes. It's worth giving the angel food a break...

2 1/3 cups Bisquick mix
3 tablespoons sugar
2/3 cup milk
3 tablespoons melted butter
4 cups fresh strawberries, sliced
1/4 ~ 1/2 cup sugar to taste~ you could also use honey
whipped cream

Preheat oven to 425 degrees. Mix in a bowl the Bisquick mix, 3 tablespoons of sugar, milk and butter. Drop spoonfuls onto ungreased cookie sheet. **The recipe calls for 6, I like to make them a little bit bigger. I make 4 or 5 per batch, depending on if they will be for adults or kids. I also like to sprinkle them with a little more sugar before they bake. They come out sparkling!

Bake 10-12 minutes or until they start to turn golden brown. Be careful not to over bake.

For the strawberries~ Some people like to mash them. Not me, they don't seem as fresh. I like the strawberries sliced and I make a quick puree to mix them in. I reserve a few of the strawberries to puree in the blender, add the sugar to taste. Add puree to the sliced strawberries. Keep strawberries refrigerated until ready to use.

Split the shortcakes, fill and top with strawberries and puree. Top with whipped cream.

Honey~Lime Glazed Grilled Pineapple





I grew up in Southern California, we grilled a lot. I love anything on the grill (even zucchini)! This would be great served with some vanilla bean ice cream. And, maybe drizzle some of the leftover marinade over it! Yum!


½ cup honey
zest of 1 lime
juice of 4 limes
1 teaspoon ground cinnamon
1 pineapple cut into ½ inch rings, core removed

In a baking dish, mix together the honey, lime zest, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate for 2 hours, turning occasionally.

Preheat grill at about medium heat.

Place the pineapple slices on the grill. Grill on both sides until the glaze caramelizes and grill marks form.

Mango Salsa


I make this to go along with chicken fajitas. I think it's a great topping, it's also great on it's own.

Also pictured~ Cilantro Sour Cream

1 cup mango, diced
1/3 cup red onion, finely diced
1/4 cup cilantro, chopped
1 tablespoon lime juice, about half a lime
kosher salt and freshly ground black pepper to taste

Combine all ingredients. Serve with fajitas, tacos, or chips.

Blueberry Muffin Crumb Cake



I love blueberry muffins, so why not a cake? With fresh blueberries, a hint of lemon, a pecan crumb topping...life is sweet! This would be great at a brunch.

2 1/4 cup fresh blueberries
Vegetable oil spray, for the pans
Flour, for dusting the pans
1/2 cup all~purpose flour
1/2 cup light brown sugar, packed
4 tablespoons cold butter
1/2 cup chopped pecans
1 lemon, zested and juiced
1 yellow cake mix
1 container (6 ounces) lemon yogurt
1/2 cup water
1/3 cup vegetable oil
3 large eggs
1 1/2 cups confectioners sugar, sifted
3 to 4 tablespoons milk

Place a rack in the center of the oven. Preheat oven to 350 degrees. Pre~cut rounds of parchment paper to fit two 9~inch round cake pans. Lightly mist only the sides of the cake pans, and lightly flour them making sure to pat the excess flour out. Place the cut parchment rounds in the bottom of the pans, and set aside.

Place the flour and brown sugar in a food processor, and pulse until combined. Cut the butter into smaller chunks and add to mixture and pulse a few times, until butter resembles coarse crumbs. Transfer mixture to a bowl and add the pecans to mix. Evenly sprinkle this topping onto the parchment paper rounds, about 3/4 cup per cake pan. Set the pans aside.

Measure out 1 tablespoon of the cake mix and set it aside. In a large mixing bowl, combine the rest of the cake mix, the yogurt, water, oil, eggs, lemon zest, 1 tablespoon of lemon juice (you will need another tablespoon for the glaze). Beat with an electric mixer on low speed until the ingredients are incorporated, 1 minute. Scrape down sides of bowl and mix at medium speed for 2 more minutes.

Set aside 1/4 cup of the blueberries for garnish. Place the remaining blueberries in a small bowl and toss with the reserved 1 tablespoon of cake mix. Fold the blueberries into the cake batter until combined. Using a large mixing spoon, dollop the cake batter on top of the crumb mixture in each cake pan, then carefully spread it evenly to the edges. Place the cake pans in the oven side by side.

Bake the cake until they are golden brown and the tops spring back when lightly pressed with a finger, 24~28 minutes. Transfer the cake pans to wire racks and let them cool for 5 minutes. Run a sharp knife around the edge of the pans and give the pans a good shake to loosen the cakes. Invert each layer onto a wire rack so the topping side is up. Peel off parchment paper. Let the layers cool about 20 minutes longer.

For the glaze~ Whisk the confectioners sugar and reserved 1 tablespoon of lemon juice in a small bowl. Add 1 tablespoon of milk at a time until glaze is smooth but still runny enough that it will drip down the side of the cake.

To assemble the cake~ Transfer one layer, topping side up, to a serving platter. Using a spoon, drizzle half of the glaze over the cake and allow it to drip over the sides. Place the second layer on top and drizzle the remaining glaze over the top, again letting it drip down the sides. Garnish the cake with remaining blueberries.

Plum Raspberry Crumble


After seeing the Julie & Julia movie with a group of friends. We have started getting together for "French" inspired dinners. This is a recipe from Ina Garten's Barefoot in Paris, I made for our last dinner. It is a really simple dish best served warm with vanilla ice cream.

2 pounds red plums, cut in half, pitted, and cut in 1~inch wedges
2/3 cup granulated sugar, divided
1 1/4 cup all~purpose flour, divided
2 tablespoons orange juice
1/2 pint fresh raspberries
1/3 cup light brown sugar, packed
1/4 teaspoon kosher salt
8 tablespoons cold unsalted butter, diced
1/2 cup quick~cooking oats
1/2 cup sliced almonds, plus extra for sprinkling

Preheat oven to 350 degrees.

In a large bowl, combine the sliced plums, 1/3 cup of the sugar, 1/4 cup of the flour, and the orange juice and toss well. Add the raspberries and toss lightly. Pour into a 9x12x2~inch baking dish.

For the topping, place the remaining 1 cup of flour, the remaining 1/3 cup of sugar, the brown sugar, and the salt in the bowl of a food processor fitted with a steel blade and pulse a few times to combine. Add the butter and pulse until the butter is the size of peas. Pour the mixture into a bowl, add the oats, and work it with your hands until it's in large crumbles. Add 1/2 cup of the almonds and mix well.

Spread the topping evenly over the plums, making sure the fruit is covered. Sprinkle with some extra almonds. Bake for 40 minutes, or until the fruit is tender and bubbly and the topping is golden brown. Serve warm or at room temperature.
