Cucumber Canapes
I was asked to make these for a wedding reception a few months ago and have been asked to make them a couple more times for different events since then. It's a great small, fresh, easy, inexpensive appetizer to make for a crowd. They are pretty cute as well. You can never go wrong with fresh dill and fresh crisp cucumbers. There are so many variations you can do with the recipe. I think this one is just old school. It's what my mother would make. Sometimes that's all you need.
This is a great one to make in a pinch because it is so easy. Only 5 ingredients!
1 8 ounce tub whipped cream cheese
1 7 ounce package dry Italian~style salad dressing mix
1 loaf cocktail rye bread, you could also use Pumpernickel
1 cucumber thinly sliced
fresh dill for garnish
In a small bowl, mix the cream cheese and salad dressing. Spread on the bread slices. Top with a slice or two of cucumber. I like two, I think it looks nicer. Garnish with dill. Refrigerate until serving.

Broccoli with Lemon~Dijon Pan Sauce and Toasted Parmigiano Bread Crumbs
I have grown to appreciate it with some additions. Give me a cheese sauce like my Grandma used to make. I'm all over it. I like Broccoli Cheddar soup. Brown it and add a lemon mustard sauce and Parmigiano Bread Crumbs. It may be a contender for my last meal.
The funny thing about this recipe is, I love it. My husband and kids just wanted their boring steamed broccoli. Oh well, every once in a while you've got to please yourself.
Recipe from Fast, Fresh and Green by Susie Middleton. In the recipe, Susie suggests the bread crumbs are optional. In my opinion, no way. They are my favorite part! :) The English muffins are great in this recipe, They are a heavy crumb that toasts well and really holds up. It would be great with some bacon cooked in as well.
For the~ Toasted Parmigiano Bread Crumbs
1/2 tablespoon unsalted butter
1/4 cup fresh bread crumbs ( a couple English muffins torn and processed in a food processor)
Kosher salt
1 tablespoon finely grated Parmigiano~Reggiano cheese
1 teaspoon chopped fresh parsley
For the~ Broccoli
1 tablespoon extra virgin olive oil
1 1/2 tablespoons unsalted butter
10 oz broccoli florets cut about 2 inches long with one flat side
1/2 teaspoon Kosher salt
1/3 cup low sodium chicken broth
1 1/2 teaspoon fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon chopped fresh parsley
To make the Toasted Bread Crumbs~ Melt the butter over low heat in a small nonstick skillet. Add the bread crumbs and a pinch of salt and stir well. Raise the heat to medium and cook the crumbs, stirring frequently, until they're toasted and most of them are a light golden brown, 3 to 4 minutes. Transfer to a small plate and let them cool. Combine with the Parmigiano and parsley.
In a large saute pan with a lid, heat the olive oil and 1 tablespoon of the butter over medium~high heat. wen the butter has melted and is starting to foam, add the broccoli and salt and toss with tongs to coat. Arrange the broccoli with one cut side down and cover. Cook without stirring until the bottoms are browned, 3 to 4 minutes. (The browning will be spotty but will be a fairly dark brown color.) Turn the florets onto another side and cook again without stirring until that side is lightly browned in spots, about 2 minutes. Carefully pour the broth into the pan (it will sputter), cover, and cook until all but 1 or 2 tablespoons of the liquid has evaporated, 2 to 3 minutes.
Remove the pan from the heat, uncover, and add the lemon juice, mustard, and the remaining 1/2 tablespoon of butter. Stir well with a silicone spatula as the butter melts and the sauce becomes creamy. Toss in the parsley, stir, and transfer the broccoli and sauce to a serving platter. Garnish with the Toasted Parmigiano Bread Crumbs. Add them immediately before serving to keep them crisp.

Parmesan Cheese Sauce over Broccoli
Let's face it, broccoli isn't very exciting. It's like the wallflower at the dance just standing there hoping to be noticed. You may not give it much attention. Sometimes it's sadly just left on the plate. Just like anything, dressed up it can shine. Did I just say shine? Yes, stay with me here. Add a yummy cheese sauce and the dance is just getting started.
I steam broccoli or green beans pretty much every night I cook dinner and make my kids eat them. Luckily it's become habit and they eat them with out adding anything to "dress it up". Here is a tasty recipe if you are feeling sorry for the looked over veggie. It also only takes a few minutes to make.
Recipe adapted from Gooseberry Patch Family Favorite Recipes Cookbook.
8 cups broccoli florets
2 Tablespoons butter
3 Tablespoons chopped onion, about half a small onion
2 Tablespoons flour
1 teaspoon chicken bouillon granules
1 3/4 cup milk
1/2 cup shredded Parmesan cheese, good quality
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 teaspoon dry mustard
1/4 teaspoon ground marjoram
More shredded Parmesan cheese for garnish
Steam broccoli, and keep warm.
Melt butter in a heavy saucepan; add onion and saute until tender. Add the flour and the bouillon granules, stirring until blended. Cook, stirring constantly for about a minute. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in 1/2 cup of the cheese, salt, pepper, dry mustard, and marjoram. Pour over broccoli. Top with additional cheese, if desired.

Chicken with Tarragon~Raspberry Cream Sauce
I love fresh herbs! Honestly, I can't seem to help myself when I'm at the store.
It's like buying shoes or something. I need to plant a garden because I spend a small fortune with the amount I buy at the store. My favorites are thyme, sage, basil, rosemary, but the top of the list for me is tarragon. I find any excuse to use it. One of my favorites is tarragon~shallot butter that I top my steak with. I'll have to post that one soon, especially with grill season upon us! So, when I saw this recipe in Better Homes and Gardens special Chicken edition, I had to give it a try.
I am also beginning to appreciate quick, easy sautes. I can't always spend hours in the kitchen, as much as I'd love to. So sad. I recently taught a 20 minute cooking class and thought, what? This is so not my thing. But, hey I'm a work in progress. This is a great dish for weeknight cooking.
1 tablespoon olive oil
1 tablespoon butter
4 boneless, skinless chicken breast halves
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup green onions only the white portion, sliced
1/2 cup chicken broth
1/2 cup heavy whipping cream
1/3 cup dry white wine
2 tablespoons fresh tarragon, snipped
12 ounces baby carrots, peeled and tops trimmed
1 small bunch watercress, thick stems removed
1 cup fresh raspberries
In a large saute pan, heat olive oil over medium~high heat; add butter. When butter melts, add chicken that has been seasoned with salt and pepper on both sides to the pan. Cook for 10~12 minutes or until chicken is no longer pink (170*F ), turning once. Transfer chicken to a serving platter; keep warm.
Add onions to the saute pan. Saute for about 3 minutes, or until just tender; transfer to platter with chicken.
Add broth, cream, and wine to pan. Bring to a boil and reduce heat to medium~low. Simmer uncovered for about 8 minutes or until slightly thickened. Stir in tarragon. Return the chicken, onion, and accumulated juices on platter to pan. Reduce heat to low, cover and keep warm.
Meanwhile, in a medium saucepan, cook carrots in lightly salted boiling water about 10 minutes or until crisp tender. Drain and return to saucepan.
To serve, toss watercress with carrots to warm slightly. Lay out carrots and watercress onto serving platter. Top with chicken. Gently stir raspberries into remaining sauce in saute pan; spoon over chicken.

Ruth's Chris' Sweet Potato Casserole
Ruth's Chris Steakhouse is one of our favorites. We always seem to go here for a birthday, anniversary, or really whenever we are in the mood for a great steak. I would highly recommend checking it out. Can't beat the sizzling plate with all that butter. Not only are the steaks fantastic, but the sides are killer as well. This sweet potato casserole is our favorite by far. I've given up on my usual potato Au gratin when I'm at a Ruth's Chris. Even if you don't like sweet potatoes, you may just fall in love. This is the restaurants most popular side. People even order it for dessert with a scoop of ice cream.
Give me a chopped salad, a great steak, and a ridiculous potato... I am a happy girl!

An important tip~
Please don't use canned sweet potatoes, it's not hard to boil them. Starting with cold water, bring 3~4 large potatoes to boil. Cook for about 30~35 minutes or until tender enough to be able to mash. Do not over cook, as they will be cooking again in the casserole. Let them cool for about 30 minutes before handling. Peel the skin off and mash.
Crust~
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 stick butter, melted
Sweet Potato Mixture~
3 cups mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1/2 cup (1 stick) butter, melted
Crust~
Combine brown sugar, flour, pecans, and butter in mixing bowl. Set aside.
Sweet Potato Mixture~
Preheat oven to 350 degrees. Coat a medium~size casserole dish with non~stick spray. Or use a couple smaller dishes.
Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hard mixer about 4 minutes, to increase the fluffiness of the sweet potato mixture.
Pour mixture into the baking dish. Bake for 30 minutes.
Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes. The brown sugar and pecan crust should be slightly browned and crunchy. Allow to set for 10 minutes before serving. The crust will harden a little more.

Bacon~Wrapped Mushrooms with Honey~BBQ Sauce
When my 10 year old daughter was begging me to make these mushrooms, I found it kind of funny. I can't think of many kids that beg for mushrooms. Well, why question? If my usually picky daughter wants to eat, I'll be cooking. The rest of my family wanted nothing to do with this one.
You don't have to make the BBQ sauce, you could use your favorite store bought sauce. I was kind of thinking why bother while I was making it. That doesn't really sound like me, does it? I must have been busy. Anyway, when I was done I was glad I did. This probably wouldn't be my favorite sauce for ribs, but it worked well with the mushrooms. Give it a try. And if you don't like mushrooms, use something else. Recipe adapted from Big Book of BBQ from the editors of Southern Living.
Honey~Barbecue Sauce
2 cups ketchup
1 cup dry white wine
1/3 cup honey
1 small onion, diced
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
2 tablespoons white vinegar
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
1/4 teaspoon Kosher salt
Bring all ingredients to a boil in a large saucepan. Reduce heat, and simmer, stirring often for 15~20 minutes or until slightly thickened.
Makes about 2 3/4 cups.
Bacon~Wrapped Mushrooms
24 small fresh button mushrooms
12 bacon slices
1 cup Honey~Barbecue Sauce
Preheat grill to 350~400 degrees. Cut bacon slices in half, so you can wrap all the mushrooms. You don't want the bacon to overlap too much as the inside won't get crisp. Microwave, in 2 batches, at high for about 2 minutes or until bacon is partially cooked. Pat dry with paper towels. Wrap each mushroom with a bacon slice, and secure with a wooden pick. Dip wrapped mushrooms in Honey~Barbecue Sauce.
Grill mushrooms, covered with grill lid, about 5 minutes on each side or until bacon is crisp and thoroughly cooked.

Broccoli Cheddar Soup
When I was a kid, I used to love helping my dad make soup. I was in love with the fact that he never had a recipe but would just keep adding things to make something really great. Maybe that's why I can't seem to follow a recipe, I love changing them or making things up as I go along.
Broccoli isn't one of my favorite vegetables, but I really like broccoli cheese soup. I love cream of anything soup, if I'm being honest. Another bonus, it's pretty hard to mess up. This is a combination of a few recipes, that I've kinda made into one. This is a really great soup and it's easy. My 9 and 2 year old daughters helped me make this.
6 tablespoons unsalted butter
1 small onion, chopped
1/4 cup all~purpose flour
2 cups heavy whipping cream (you could use half and half)
3 cups chicken broth
2 bay leaves
1/4 teaspoon nutmeg, freshly grated
Kosher salt and freshly ground black pepper
4 cups broccoli florets
1 large carrot, diced
2 1/2 cups sharp white and yellow cheddar cheese, grated. Plus more for garnish
Melt the butter in a large pot over medium heat. Add the onion and cook until tender, about 5 minutes. Whisk in the flour and cook until golden, about 4 minutes, then gradually whisk in the cream until smooth. Add the chicken broth, bay leaves and nutmeg, season with salt and pepper and bring to a simmer. Reduce heat to medium-low and cook, uncovered, until thickened, about 20 minutes.
Add the broccoli and carrot to the broth mixture and simmer until tender, about 20 minutes. Discard the bay leaves. Puree the soup in batches in a blender until smooth; you'll still have flecks of carrot and broccoli. Return to the pot. (Or puree the soup in the pot with an immersion blender.)
Add the cheese to the soup and whisk over medium heat until melted. Add up to 3/4 cup water if the soup is too thick. Garnish with more cheese.

Cauliflower and Bacon Gratin
OK, Cauliflower? Not a standout favorite of mine. I am embarrassed to say my kids weren't quite sure what it was! I think I may have put it on a veggie tray a couple times in my adult life and that's about it. If you are like me and need to introduce a forgotten vegetable to the table, I've got three words for you~ butter, cream and bacon. Something tells me they just might like it, right?! They did :) It's a super easy side dish.
This recipe is adapted from Giada DeLaurentiis
unsalted butter, for dish, plus 4 tablespoons cut into 1/2 inch pieces
3 slices day~old sourdough bread or 2 cups bread crumbs
3/4 cup heavy cream
1 teaspoon all~purpose flour
8 ounces bacon, cooked until crispy and cut into 1/2 pieces
1 cup Gruyere cheese, divided
kosher salt and freshly ground black pepper
1 pound cauliflower, trimmed and cut into florets
extra virgin olive oil, for drizzling
Place an oven rack in the center of the oven. Preheat oven to 350 degrees. Butter a 8x8 casserole dish. Set aside.
In the bowl of a food processor, blend the bread until it forms into crumbs. In a large non~stick skillet, heat the butter over medium heat. Add the bread crumbs and cook, stirring constantly until all the butter has been absorbed and the bread crumbs are toasted, about 2 minutes.
In a medium bowl, whisk together the cream and flour. Add the bacon and 1/2 cup of the Gruyere. Season with salt and pepper, to taste.
Bring a medium saucepan of water to a boil over high heat. Add the cauliflower and cook for 2 minutes. Drain the cauliflower and toss with the cream mixture. Pour the cauliflower mixture into the prepared baking dish. Sprinkle with bread crumbs and remaining cheese. Drizzle with olive oil and bake for about 40 minutes until the cheese has melted and the top is golden brown.
Serves~ 4 to 6 as a side

Tropical "Green" Smoothie

I make some kind of smoothie just about every day for my kids. Sometimes, I try to sneak something healthy in them. If it will get my skinny kids to consume more veggies, I'm going for it. I'm not getting to radical on you and going all "healthy green revolution." I'm just trying to feel good about what my kids are eating or not eating.
Hmm...Spinach Smoothie!?
I have to admit, it took me a while to try this one. I'm glad I did, my kids have been asking me to make the weird spinach one. They loved it! So, skip the salad and try a smoothie, it's pretty good.
2 cups spinach
1 mango
2 bananas
1 cup pineapple chunks (fresh)
1 cup water
1 cup ice
Blend ingredients until smooth.

Creamed Corn
I'm posting this one without the picture for right now. I have a few people asking for it! I'm sure I'll make it soon and get the picture on here :)
When my kids ask me to make "sugar corn", I know exactly what they are talking about. I make this sometimes when I bbq, or whenever I'm craving it. It's got butter, sugar, and heavy cream...just don't eat it every day. You may want to though, it's that good!
8 ears corn, husked
2 tablespoons sugar
1 tablespoon flour
kosher salt and freshly ground black pepper
1 cup heavy whipping cream
1/2 cup cold water
3 tablespoons butter
In a large bowl, cut the kernels from the cob of corn. With the back of the knife blade, scrape against the cob to press out the milky liquid.
In a small bowl, whisk together the sugar and flour. Combine with the corn. Add the heavy cream and water. Mix.
In a large skillet over medium heat, melt 2 tablespoons of the butter. Add the corn mixture. Season with salt and pepper to taste. Turn heat down to medium~low, stirring occasionally until it becomes creamy. About 20~30 minutes. Add the last tablespoon of butter before serving.

Sweet Potato & Bacon on Endive Spears
I love appetizers! I would take an appetizer over dessert any day. I like having quick and easy things to make in case I have last minute company, or I just want a snack. Another bonus with this recipe...my kids love sweet potatoes! Some people, including my kids, may not love the bitterness of the endive. Make it with the hearts of romaine lettuce or whatever you would like to try. This recipe came from Fine Cooking magazine.3 slices bacon, thinly cut crosswise
1 small sweet potato, peeled and cut into a 1/4 inch dice
kosher salt and freshly ground black pepper
3 Tablespoons fresh chives, thinly sliced
2 medium heads Belgian endive
1/4 cup creme fraiche or sour cream
Saute bacon over medium heat for about 3 minutes or until it has rendered some of it's fat. Add the sweet potato and about 1/4 teaspoon each of the salt and pepper. Cook, stirring, until the sweet potato is tender and the bacon starts to crisp, about 8 minutes. Stir in 2 tablespoons of the chives and season with more salt and pepper to taste. Let cool for a couple of minutes.
Prepare the endive~ slice 1/2 inch off the bottom of the endive heads so the outer leaves break free. Cut another 1/2 inch off the bottom to let more leaves free. Repeat until all the larger leaves are free. If you would like them to be the same length, line up the leaves and cut the bottoms to even them out. Wash and dry the leaves.
Spoon the sweet potato mixture near the base of the leaves. Top each with a dollop of the creme fraiche and then sprinkle with the remaining chives. Serve immediately or let sit for up to 20 minutes before serving.

Potato Salad

This is the potato salad I grew up with. I'm not a mayo, or egg yolk fan...but this is one of the few things I will eat with those ingredients. The quantities are estimates, so adjust to your liking. I make it from memory every time. I tried my best to come up with measurements. It's great this time of year.
About 12 russet potatoes
About 12 eggs, hard boiled. I actually toss about half the yolks when I make it. If you like eggs, leave them in. :)
1/2 cup red onion, finely diced~ you could use whatever onion you like, I like the color of the red.
1/2 cup red pepper, diced
1/2 cup green pepper, diced
1 cup celery, finely diced~ I like to use the heart of the celery, definitely with the tops on. They add so much flavor.
1/4 cup Italian parsley, finely chopped
About 1 1/3 cups good quality mayonnaise
About 1/2 cup sweet pickle relish
1~2 tablespoons yellow prepared mustard
Kosher salt and freshly ground pepper to taste
About 2 teaspoons caraway seeds~ I think this makes the salad.
Celery salt to taste
Boil the whole potatoes until tender, take them out of the water to cool. Hard boil the eggs and set aside to cool. When the potatoes and eggs have cooled, peel them and cut into bite size chunks. Add the red onion, red pepper, green pepper, celery, and parsley. Mix together carefully. For the rest of the ingredients, I would add a little at a time until it tastes right to you. Mixing carefully so the potatoes don't fall apart too much. Keep refrigerated.

Lemon Basil Pasta with Broccoli

I love fresh herbs! One that I use a lot of is basil. I also love any kind of citrus. I think lemon goes great with basil. I like this pasta because it is a little different than what I normally make. It's also really pretty. I sometimes make this to go along with BBQ chicken. I think I'm trying to make summer come a little sooner with this one!
1 tablespoon olive oil
2 cloves garlic, minced
2 cups heavy cream
3 lemons
kosher salt and freshly ground pepper
2 cups fresh broccoli, cut into florets
1 pound pasta, something that will hold sauce (I used cellentani)
small bunch of fresh basil, cut in a chiffonade
1/2 cup Parmesan cheese, freshly grated
Saute the garlic in the olive oil for 1 minute. Add the cream, the zest from 2 lemons, the juice of 1 and a half lemons, 2 teaspoons salt, and 1 teaspoon of pepper. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until sauce starts to thicken.
While sauce is cooking, cook the broccoli florets in a pot of boiling salted water for 4 to 5 minutes, until tender but still firm. Drain the broccoli into an ice bath to stop the cooking. This will keep the broccoli very green. Set aside.
Cook the pasta, according to package directions. Drain the pasta and place it back into the pot. Immediately add the cream mixture and cook it over medium~low heat for about 3 minutes, until most of the sauce has been absorbed into the pasta. Add the broccoli and combine. Pour the hot pasta into a large bowl, add most of the Parmesan cheese, and most of the basil, cut the remaining lemon into slices and add them to the bowl. Toss well, season to taste, and garnish with remaining Parmesan cheese and basil.
